Sweet Potatoes: Fan or Foe This Season?



Tired of the same old Thanksgiving foods? Try adding some colorful beets, potatoes, and carrots to the bottom of your roasting pan with chicken broth to bring some more "festive" to your gathering!

Sweet potato casserole loaded with sugar and marshmallows is enough to put anyone in a food coma, but trying roasted chopped sweet potatoes can reduce calories and provide much more nutrient value from this powerhouse vegetable. Sweet potatoes are packed with fiber (4g per cup), potassium (helps with lowering blood pressure and better muscle contraction), and a wide range of antioxidants to help prevent oxidative stress and lower your risk for multiple types of cancer. The metaphorical cherry-on-top is the amount of vitamin A; just 1 cup provides 377% of your daily value! Vitamin A is a powerful antioxidant that is vital to healthy eyes, skin, brain function, immune health, and helps to slow the aging process. If you're not usually a fan of these tubers, maybe it's time to give them a second chance with some rosemary, thyme, or just salt and pepper in a roasting pan at 375 F for ~30 minutes and start reaping the benefits for your health this holiday season!
